Blue granules or powders are protein-bound pigments, and therefore have properties similar to proteins. Their isoelectric point is 3.4. They are soluble in water but insoluble in alcohol and oils. They are unstable to heat, light, and acid. They are stable in weakly acidic and neutral conditions (pH 4.5-8), but precipitate in acidic conditions (pH 4.2) and can be discolored by strong alkali.
